A beloved classic from the sun-drenched coast of Provence, our Bourride is a luxurious Mediterranean seafood stew that showcases the bounty of the sea. Unlike its cousin bouillabaisse, bourride is enriched with a generous amount of house-made aioli, creating a creamy, garlicky broth that envelops the freshest catch. Chef Philippe Dupré prepares this dish with an assortment of firm white fish, shellfish, and vegetables, simmered in a fragrant fish stock with saffron and herbs. Ingredients
Assorted white fish (monkfish, sea bass), mussels, shrimp, fennel, potatoes, saffron, house-made aioli, garlic, white wine, fish stock, fresh herbs, crusty bread.
Preparation
Fish stock is prepared with aromatics and saffron. Fish and shellfish are poached gently. The broth is enriched with aioli just before serving, creating a velvety sauce. Served with crusty bread.
