Our house-made foie gras terrine, prepared following Chef Philippe Dupré's treasured recipe, is sliced thick and served at the perfect temperature to allow its buttery, complex flavors to shine. Alongside, a beautifully dressed salad of tender French green beans provides a delightful textural and flavor contrast. Finished with a drizzle of aged balsamic and toasted brioche.
Ingredients
House-made duck foie gras terrine, French haricots verts, shallot vinaigrette, aged balsamic reduction, toasted brioche, fleur de sel, fresh chervil.
Preparation
The foie gras terrine is prepared in-house and aged for 48 hours before serving. The green beans are blanched until just tender-crisp and dressed with a light shallot vinaigrette. Everything is assembled fresh for each order.
