The quintessential French dessert, our Crème Brûlée is a silky, rich vanilla custard topped with a layer of hard caramel created tableside with a culinary torch. Chef Philippe Dupré uses only the finest Madagascar vanilla beans and fresh farm eggs to create this heavenly dessert. The contrast between the crackling caramel top and the cool, creamy custard beneath is pure perfection. A timeless classic that has delighted guests at Ici et Là since 2009.
Ingredients
Heavy cream, Madagascar vanilla bean, farm-fresh egg yolks, cane sugar, a touch of sea salt.
Preparation
Slow-baked in a water bath to achieve the perfect silky texture, then chilled. Just before serving, a thin layer of sugar is caramelized with a torch to create that signature crackling top.
